We
make only Syrah and we use only our own grapes. Our wine owes its character
to the place where the grapes are grown. It is truly a vineyard wine. (Which
is not to belittle Steve’s winemaking ability. He knows when to intervene
and when not to.)
The flavor
of our wine is reminiscent of the Northern Rhône in its red berry
and white pepper aromas, but it has more extract and body. It has intense
flavor and deep color but, unlike some other red wines, where big color
usually means big tannin, our wine is not harshly tannic so it drinks well
when it is young. We expect it to age well.
We
ferment to dryness before pressing and we age the wine in French oak barrels.
We feel strongly that the flavor of Syrah does not benefit from new oak,
so we use only older barrels. We do not filter the wine at all. Its clarity
comes from careful racking throughout the barrel aging period.
